Chef de Partie / Commis Chef
Leisure and Sea Services Ltd is currently looking to recruit Chefs de Partie and Commis Chefs to join its team on a full-time basis. The level of appointment will depend on the selected candidate's experience.
Leisure and Sea Services Ltd, based at The Core in Msida, recruits, employs and manages staff for hotels, serviced apartments and cruise and yacht operators across Malta and the central Mediterranean.
Reporting to the client's Head Chef or Sous Chef, the successful candidates will prepare and cook dishes to set standards in hotel and resort kitchens.
Main responsibilities:
- Prepare ingredients and cook dishes to recipe and presentation standards.
- Run an assigned section of the kitchen during service.
- Receive, check and store deliveries correctly.
- Follow HACCP and food safety procedures and keep records.
- Keep the kitchen, equipment and storage areas clean.
- At Chef de Partie level: manage a section, supervise and train commis chefs, and assist with menu planning and stock control.
What we are looking for
- A qualification at MQF Level 3 or higher in Culinary Arts, Catering or Hospitality, or equivalent
- A minimum of 1 year's experience in a professional kitchen
- Candidates with 3 or more years' experience will be considered for the Chef de Partie level
- Knowledge of food safety and HACCP
- Ability to work under pressure in a busy kitchen
- Good spoken English
- Willingness to work shifts, including evenings, weekends and public holidays
What we offer
- Gross salary of EUR 24,000 to EUR 32,000 per annum, depending on level and experience
- Indefinite contract after successful completion of the probationary period
- 40 hours per week on a roster
